Pollo Encacahuatado is a traditional braised dish of chicken in a spicy peanut and chili sauce originating in Pueblo, Mexico. A simpler version of a traditional Molé Poblano, this dish is most commonly made for Cinco De Mayo celebrations. You won’t be afraid to try this at home for your family!
